Lime and Lemongrass Prawn Pizza

A delightful light pizza that can be varied with different ingredients. Use your Lime and Lemongrass paste as the base sauce which you can build upon with a selection other tasty ingredients Get creating, there so many ingredients to choose from, spinach, mushrooms, artichokes, olives, sundried tomatoes, ham, whatever else you desire, there are no rules.

Ingredients

  • Pizza balls (fresh) or store made pizza bases.        2   (230-250g each)
  • Fresh Coriander (chopped)                                     2 tablespoons
  • Fresh parsley  (chopped)                                        2 tablespoons
  • Lemon Juice                                                            3 tablespoons
  • Olive oil                                                                   5 tablespoons
  • Tinned Tomatoes (chopped)                                   5 tablespoons
  • Lime, lemongrass paste                                         5 tablespoons
  • Parmesan cheese (grated)                                     ¼ cup
  • Baby spinach leaves                                              20g
  • Raw prawn cutlets (peeled & divined)                   20 each
  • Baby Rocket leaves         

Method

  1. Combine parsley, coriander, garlic, lemon juice in a bowl, or blitz in food processor.  Set aside.
  2. In a pan place 1 tbsp olive oil, lime and lemongrass paste, tinned tomatoes & juice sauté for 5mins until reduced to a thick sauce set aside to cool.
  3. Sauté prawns in 3 tbsps of oil until just turning pink.
  4. Heat oven to 220C.  Divide Pizza dough into 4 balls and roll out into rounds on floured board.  Place on floured oven trays. 
  5. Spread pizza bases with sauce, sprinkle with parmesan cheese, top with baby spinach and 5 prawns per pizza, season with salt and pepper.
  6. Bake in oven for 15-20 minutes or until crisp, golden and prawns cooked through.
  7. To serve drizzle with parsley, coriander & drop a handful of fresh baby rocket leaves on top of each pizza.

Tips: 

These can be served as baby pizzas as finger food or nibbles with drinks.  Roll out pizza dough into a squares. Follow as per instruction use a round plain cookie cutter to cut out baby pizzas with a prawn on each Pizza
