Tomato & Tamarind Gourmet Pizza

When making pizza, there should be no constraints, just express yourself with whatever pleases you. This pizza is pure magic, we've just thrown in things we love without restraint and made it into a tasty, delicious comfort food. Have fun creating !

 

Cooking Time 35 - 40 minutes

Serves 4

Ingredients

  • store made pizza bases.              2   (230-250g each)
  • Fresh Coriander (chopped)          2 tablespoons
  • Fresh parsley  (chopped)             2 tablespoons
  • Lemon Juice.                                3 tablespoons
  • Olive oil                                         5 tablespoons
  • Tinned Tomatoes (chopped)         5 tablespoons
  • Tomato and tamarind  paste         5 tablespoons
  • Parmesan cheese (grated)          ¼ cup  
  • Baby spinach leaves                     20g
  • Cooked and chopped chicken (leftover roast is perfect) 200g
  • Chopped Capsicums                   1

Method

  1. Combine parsley, coriander, garlic, lemon juice in a bowl, or blitz in food processor.  Set aside.
  2. In a pan place 1 tbsp olive oil, tomato & tamarind paste, tinned tomatoes & juice, sauté 5mins until reduced to a thick sauce set aside to cool.
  3. Heat oven to 220C. Spread pizza bases with sauce, sprinkle with parmesan cheese, top with baby spinach, capsicums and chopped chicken per pizza, season with salt and pepper. Add any other topping ingredients you'd like, don't hestitate
  4. Bake in oven for 10-15 minutes or until crisp and golden.
  5. To serve drizzle with parsley, coriander dressing & drop a handful of fresh baby rocket leaves on top of each pizza.
